Pancake Day: time for a well-earned break

When running your own business, hard work is obviously crucial. But it’s important not to overdo it too! In fact, taking some time out can actually improve productivity.

And for us, there’s no better excuse for a well-earned break than Pancake Day!

Whether you’re a baker looking to show off your business skills, a small business looking to do something nice for your staff, or a ‘homepreneur’ looking to take a delicious break from work, Pancake Day is the perfect opportunity.

That’s why we asked Kelly Jones, owner of The Manchester Cakehouse, to share her recipes for perfect pancakes!

So let’s get started…

“Back to Basics” Pancake Recipe

Ingredients

  • 100g Plain Flour
  • 2 Large Free Range Eggs
  • 300ml Milk
  • A pinch of Salt

Method

Add the flour, eggs, milk and salt to a large bowl and whisk to smooth batter. Then leave to rest for as long as possible in the fridge. (If you can’t wait or are short on time you can cook straight away).

Heat a frying pan over a medium heat until hot. I use butter to grease my pan but you can use vegetable oil (or any kind of oil you’d like!) Now add a ladle of the pancake mix and cook on each side for roughly one minute, depending on how you like your pancake! I like to keep each of my pancakes hot if I’m serving as a stack by heating a plate and covering with foil. Place the cooked pancake onto the foil then use another piece of foil as a lid, it keeps them just perfect.

“The Boss” Pancake Recipe

Ingredients

  • 100g Plain Flour
  • 2 Large Free Range Eggs
  • 300ml Milk
  • A pinch of Salt
  • Lemon Juice (Fresh or Jiff, your call)
  • Castor Sugar
  • Icing Sugar

Method

  1. Make a “Back to Basics” pancake using the recipe above.
  2. Place the pancake on your plate and sprinkle on as much or as little lemon juice as you’d like. Then sprinkle over the castor sugar.
  3. Once you’ve done this, roll the pancake into a sausage shape and dust with icing sugar. The classic lemon and sugar pancake with a super sweet twist. This is The Boss’s favourite, so enjoy!!!

“The Beast” Pancake Recipe

Ingredients

  • 100g Plain Flour
  • 2 Large Free Range Eggs
  • 300ml Milk
  • A pinch of Salt
  • Chocolate Spread
  • Whipped Cream
  • Oreo Cookies (or your favourite biscuit)

Method

  1. Make a “Back to Basics” pancake using the recipe above.
  2. Lay the pancake out on the plate and smother with chocolate spread. If you need to, pop the spread into the microwave for a few seconds to soften it.
  3. Next, roll the pancake into a delicious sausage shape. Squirt the whipped cream in the top (as much or as little as you like) and top with your delicious biscuits. You may need to undo the top button of the jeans for this beast… enjoy!!!
